This Italian Drunken Noodle Recipe has been a family favorite for a while. Great flavors and we end up making a double batch every time we make it;
Ingredients:
- 8 oz spaghetti
- 2 tablespoons olive oil
- 4 cloves garlic (minced)
- 1/2 teaspoon red pepper flakes\
- 1/2 cup white wine
- 1 can diced tomatoes (14 oz)
- 1/4 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Salt and pepper (to taste)
- Fresh basil (chopped, for garnish)
Instructions:
1. Cook spaghetti as per package directions until al dente.
2. Drain the spaghetti and set aside.
3. Sauté minced garlic and red pepper flakes in olive oil until fragrant.
4. Pour white wine into the skillet and simmer briefly.
5. Then add diced tomatoes with juices and cook for 5-7 minutes.
6. Toss the cooked spaghetti into the skillet to coat evenly.
7. Stir in heavy cream and Parmesan cheese, seasoning with salt and pepper.
8. Garnish with chopped fresh basil before serving.
Additional Tips:
1. Use fresh tomatoes for a brighter flavor, or canned for convenience.
2. Deglaze with wine by scraping the pan to release extra flavor.
3. Reserve some pasta water to adjust the sauce consistency if needed.
4. Use whole wheat or gluten-free pasta for a healthier alternative.
5. Add protein like cooked sausage, chicken, or shrimp for a heartier meal.
