Ingredients

2 small chicken breasts or thighs

1 tsp lime juice

1 tsp paprika

1/2 tsp garlic powder

Salt & pepper to taste

For the bowl:

1 cup cooked rice (brown, jasmine, or cauliflower rice)

1 ripe mango, diced

1/2 red bell pepper, thinly sliced

1/2 cup cucumber, chopped

1/2 avocado, sliced

2 tbsp red onion, finely diced

2 tbsp fresh cilantro or mint, chopped

Optional: 1 tbsp toasted shredded coconut or chopped cashews

For the honey-lime dressing:

1 tbsp olive oil

1 tbsp lime juice

1 tsp honey or maple syrup

1/2 tsp Dijon mustard (optional for depth)

Salt & pepper to taste

Instructions

1. Marinate & grill the chicken

Rub chicken with olive oil, lime juice, paprika, garlic powder, salt, and pepper.

Grill or pan-sear over medium heat for 6–7 minutes per side, until cooked through.

Let rest, then slice thinly.

2. Make the honey-lime dressing
