This salad combines sushi-grade tuna, creamy avocado, and a soy-lime dressing, served over a bed of crispy pan-fried rice. It’s like a poke bowl meets crispy rice sushi — light, refreshing, yet indulgent.

Ingredients 

For the Crispy Rice:

2 cups cooked sushi rice or jasmine rice (preferably chilled overnight)

2 tbsp neutral oil (avocado, canola, or vegetable)

1 tsp sesame oil

Pinch of salt

For the Tuna Mix:

8 oz sushi-grade ahi tuna, diced into small cubes

1 tbsp soy sauce (or tamari for GF)

1 tsp sesame oil

1 tsp rice vinegar

½ tsp honey or agave

1 green onion, finely sliced

1 tsp sesame seeds

For the Salad:

1 avocado, diced

1 small cucumber, diced

1 cup mixed greens or shredded lettuce

1 small carrot, julienned (optional)

1 sheet roasted seaweed (nori), cut into thin strips

Extra sesame seeds, for topping

Optional Spicy Mayo Drizzle:

2 tbsp mayonnaise

1 tsp sriracha

½ tsp lime juice

‍ Instructions

1. Make the Crispy Rice

Heat neutral oil + sesame oil in a large nonstick skillet over medium-high.

Spread chilled rice evenly into the pan, pressing down slightly.

Cook 4–5 minutes without stirring until golden and crispy on bottom.

Flip in sections, crisp the other side 3–4 minutes.

Remove, let cool slightly, and break into chunks.

2. Prepare the Tuna Mix

In a bowl, combine diced tuna, soy sauce, sesame oil, rice vinegar, honey, green onion, and sesame seeds. Toss gently.

3. Assemble the Salad

In bowls, layer mixed greens, cucumber, carrot, and avocado.

Add chunks of crispy rice.

Spoon tuna mixture on top.

Garnish with nori strips, sesame seeds, and spicy mayo drizzle.

Serving Suggestions

Serve with pickled ginger and a side of edamame.

Swap tuna with salmon or cooked shrimp if preferred.

Make it vegetarian with diced avocado + edamame as the protein.

Tips & Notes

Chilled rice works best for crisping (freshly cooked rice will be too sticky).
