Turkish Style Spinach & Cheese Gozleme 

Gozleme is a beloved Turkish flatbread, filled and cooked on a hot griddle until golden and blistered. This version is packed with sautéed spinach, creamy cheese, fresh herbs, and olive oil—simple, savory, and comforting.

Ingredients

Dough

2½ cups all-purpose flour

1 tsp salt

1 tbsp olive oil

¾–1 cup warm water

Filling

2 tbsp olive oil

1 small onion, very finely chopped

250 g (about 8 oz) fresh spinach, finely chopped

½ tsp salt

¼ tsp black pepper

200 g Turkish white cheese (beyaz peynir) or feta, crumbled

2 tbsp chopped fresh dill or parsley

For Cooking

Olive oil or butter, for brushing

Instructions

1. Make the dough

1. In a bowl, mix flour and salt.

2. Add olive oil and gradually add warm water to form a soft dough.

3. Knead 5–6 minutes until smooth.

4. Cover and rest for 20 minutes.

2. Prepare the filling

1. Heat olive oil in a pan over medium heat.

2. Add onion and sauté until soft and translucent.

3. Add spinach, salt, and pepper. Cook just until wilted.

4. Remove from heat and let cool slightly.

5. Mix in cheese and fresh herbs.

3. Shape the gozleme

1. Divide dough into 4 balls.

2. Roll each ball very thin into a large circle (almost transparent).

3. Spread filling over half of the dough, leaving a border.

4. Fold over to seal (half-moon or square shape). Press edges gently.

4. Cook

1. Heat a dry pan or griddle over medium heat.

2. Cook each gozleme 2–3 minutes per side until golden spots appear.

3. Brush lightly with butter or olive oil after flipping.

Serving

Cut into wedges and serve warm

Tips

Roll dough as thin as possible for authentic texture

Do not overfill—helps prevent tearing

Use low heat if browning too fast
