Ingredients

1 can (15 oz / 400g) chickpeas, rinsed & drained

1 cup sweet corn kernels (fresh, frozen, or canned)

½ small red onion, finely chopped

2 garlic cloves, minced

¼ cup fresh coriander or parsley, chopped

½ cup all-purpose flour (or chickpea flour for gluten-free)

2 tbsp ground flaxseed + 5 tbsp water (flax egg)

½ tsp cumin powder

½ tsp smoked paprika (or regular paprika)

½ tsp turmeric powder (optional for color)

½ tsp baking powder

Salt & pepper, to taste

2–3 tbsp olive oil or avocado oil (for shallow frying)

1. Make Flax Egg

Mix flaxseed with water in a small bowl, set aside for 5 minutes until gel-like.

2. Mash Chickpeas

In a large bowl, mash chickpeas with a fork or potato masher until partly smooth but still slightly chunky.

3. Mix Ingredients 

Add sweet corn, onion, garlic, coriander, flour, flax egg, cumin, paprika, turmeric, baking powder, salt, and pepper.

Stir until mixture holds together (if too wet, add more flour).

4. Shape Fritters

Form small patties (about 2 tbsp mixture each).

5. Cook Fritters

Heat 2 tbsp oil in a non-stick skillet over medium heat.

Cook fritters for 3–4 minutes per side until golden brown and crispy.

Place on paper towels to drain excess oil.

6. Serve

Serve warm with vegan yogurt dip, tahini sauce, or avocado salsa.

Notes & Tips

For extra crispiness, bake fritters at 400°F (200°C) for 20–25 minutes, flipping halfway.

You can spice them up with chili flakes if you like heat.
