Ingredients

Option 1: Classic Vegan Cheese

2 slices bread (sourdough or whole wheat)

2–3 slices vegan cheese

1½ tbsp olive oil

Option 2: Homemade Cashew Melt

¼ cup soaked cashews

2 tbsp nutritional yeast

1 tsp lemon juice

½ tsp garlic powder

¼ tsp turmeric (for color)

Salt to taste

2–3 tbsp water

Optional Add-Ins

Tomato slices

Caramelized onions

Spinach or arugula

Instructions

Make Cashew Melt

Blend all cashew melt ingredients until smooth and creamy

2️⃣ Assemble Sandwich

Spread vegan butter or olive oil on outside of bread

Add vegan cheese or cashew melt inside

Add optional fillings

3️⃣ Grill

Heat pan over medium-low heat

Cook sandwich 3–4 minutes per side until golden and melty

4️⃣ Serve

Slice and enjoy hot
