Ingredients
Base Layer:
4 large (12-inch) flour tortillas
4 small (6-inch) crispy tostada shells (or baked corn tortillas)
1½ cups refried beans (vegetarian) or mashed black beans
1 cup shredded cheddar or Mexican blend cheese
Veggie Filling:
1 cup diced tomatoes
1 cup shredded lettuce
½ cup diced red onion
1 cup diced bell pepper (any color)
1 cup cooked corn kernels (optional)
Seasoning for Beans:
1 tbsp olive oil
1 tsp cumin
½ tsp paprika (smoked paprika if you want a deeper flavor)
½ tsp garlic powder
Pinch of salt & pepper
Creamy Sauce Layer:
½ cup sour cream or Greek yogurt
2 tbsp mayonnaise (optional for richness)
1 tbsp lime juice
1 tsp chili powder or taco seasoning
Instructions
1. Prep the Beans
Heat olive oil in a skillet over medium heat.
Add beans, cumin, paprika, garlic powder, salt, and pepper.
Mash slightly and cook for 3–4 minutes until warm and fragrant.
2. Make the Sauce
Mix sour cream (or yogurt), mayo, lime juice, and chili powder in a small bowl.
Set aside.
3. Assemble Each Crunch wrap
Lay a large flour tortilla flat.
Spread 3–4 tbsp of seasoned beans in the center (about the size of the tostada shell).
Sprinkle cheese over beans.
Place tostada shell on top of cheese.
Spread creamy sauce on top of tostada shell.
Add lettuce, tomato, onion, peppers, and corn.
4. Fold the Crunch wrap
Fold edges of the large tortilla up and over the filling, working in a circle to cover everything.
If the tortilla doesn’t fully cover, cut a small piece from another tortilla and place in the center before folding.
5. Cook Until Crisp
Heat a nonstick skillet over medium heat.
Place Crunch wrap seam-side down and cook 2–3 minutes until golden brown.
Flip and cook the other side until crisp.
6. Serve
Cut in half and serve warm with salsa, guacamole, or extra sauce.
Notes & Tips
Extra Crunch: Use two tostada shells per wrap for an even crunchier bite.
Cheese Melt Trick: Put the cheese right under the tostada shell so the heat from the beans melts it.
Mediterranean Twist: Swap beans for hummus, add feta, cucumber, and olives for a Greek-inspired crunchwrap.
