 Ingredients

2 medium zucchinis (about 2 cups, grated)

1 carrot (grated, optional but adds sweetness)

1 onion (finely chopped or grated)

1 red bell pepper

1 cup shredded cheese (cheddar, mozzarella, or mix)

1 cup self-raising flour (or all-purpose + 1 tsp baking powder)

5 large eggs

¼ cup olive oil

½ tsp salt

½ tsp black pepper

½ tsp dried oregano

Fresh parsley or dill, chopped

Instructions

Prep the zucchini: Grate zucchini, place in a clean kitchen towel, and squeeze out excess moisture.

Mix veggies: In a large bowl, combine zucchini, carrot, onion, bell pepper, and cheese.

Add dry ingredients: Stir in flour, salt, pepper, and herbs until the mixture is evenly coated.

Whisk wet ingredients: In a separate bowl, whisk eggs and olive oil. Pour into veggie mixture.

Combine: Mix until everything is well combined (should be thick but pourable).

Bake: Pour into a lined baking dish (approx. 9×13 inch or 22×30 cm). Spread evenly.

Cook: Bake at 180°C (350°F) for 35–40 minutes, until golden and set in the middle.
