Vibrant & Colorful Pasta Salad
Ingredients:
- 12 oz spiral pasta (rotini)
- 1 cup broccoli florets, chopped
- 1 cup cherry tomatoes, halved
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cucumber, diced
- 1/4 cup black olives, sliced (optional)
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled (optional)
- Lemon slices, for garnish
Dressing:
- 1/4 cup olive oil
- 2 tbsp lemon juice (about half a lemon)
- 1 tsp lemon zest
- 1 clove garlic, minced
- 1/2 tsp dried oregano
- Salt and pepper, to taste
Directions:
- Cook the pasta: In a large pot, cook the spiral pasta according to package instructions. Drain, rinse with cold water, and set aside to cool.
- Prepare the vegetables: In a large mixing bowl, combine the broccoli, cherry tomatoes, red and yellow bell peppers, red onion, cucumber, and black olives.
- Make the dressing: In a small bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper.
- Assemble the salad: Add the cooled pasta to the bowl with the vegetables. Pour the dressing over everything and toss well to combine.
- Garnish: Add fresh parsley, feta cheese, and lemon slices on top.
Serve: Chill for 20-30 minutes in the fridge if desired, then serve fresh and enjoy!
