Vibrant & Colorful Pasta Salad

Ingredients:

 

  1. 12 oz spiral pasta (rotini)
  2. 1 cup broccoli florets, chopped
  3. 1 cup cherry tomatoes, halved
  4. 1 red bell pepper, diced
  5. 1 yellow bell pepper, diced
  6. 1/2 cup red onion, thinly sliced
  7. 1/2 cucumber, diced
  8. 1/4 cup black olives, sliced (optional)
  9. 1/4 cup fresh parsley, chopped
  10. 1/4 cup feta cheese, crumbled (optional)
  11. Lemon slices, for garnish

Dressing:

  1. 1/4 cup olive oil
  2. 2 tbsp lemon juice (about half a lemon)
  3. 1 tsp lemon zest
  4. 1 clove garlic, minced
  5. 1/2 tsp dried oregano
  6. Salt and pepper, to taste

Directions:

  1. Cook the pasta: In a large pot, cook the spiral pasta according to package instructions. Drain, rinse with cold water, and set aside to cool.
  2. Prepare the vegetables: In a large mixing bowl, combine the broccoli, cherry tomatoes, red and yellow bell peppers, red onion, cucumber, and black olives.
  3. Make the dressing: In a small bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper.
  4. Assemble the salad: Add the cooled pasta to the bowl with the vegetables. Pour the dressing over everything and toss well to combine.
  5. Garnish: Add fresh parsley, feta cheese, and lemon slices on top.

Serve: Chill for 20-30 minutes in the fridge if desired, then serve fresh and enjoy!
