Mexican Shrimp Cocktail
A refreshing and flavorful dish often served as a starter or appetizer in Mexican cuisine!
Ingredients:
For the Shrimp:
* 1 lb large shrimp, peeled and deveined
* 1 bay leaf
* 1 small onion, quartered
* 2 garlic cloves, smashed
* 1 tsp black peppercorns
* 1-2 tbsp salt
* Water (enough to cover shrimp)
For the Cocktail Sauce:
* 1 ½ cups ketchup
* 2 tbsp fresh lime juice (about 1 lime)
* 2 tbsp hot sauce (like Tapatío or Valentina, or to taste)
* 1 tbsp Worcestershire sauce
* 1 tsp olive oil (optional)
* 1 tbsp chopped cilantro
* 1 small cucumber, peeled and diced
* 1 small red onion, finely chopped
* 1 ripe avocado, diced
* 1-2 tbsp fresh lime juice (for garnish
* Salt and pepper, to taste
Garnishes (Optional):
* Fresh cilantro, chopped
* Lime wedges
* Sliced jalapeños
Instructions:
1. In a large saucepan, add the shrimp, bay leaf, quartered onion, garlic cloves, black peppercorns, salt, and enough water to cover the shrimp.
2. Bring to a boil over medium-high heat, then reduce the heat and simmer for about 2-3 minutes, or until the shrimp are pink and cooked through. Avoid overcooking the shrimp.
3. Drain the shrimp and discard the aromatics (bay leaf, onion, garlic).
4. Let the shrimp cool slightly, then chop them into bite-sized pieces. Set aside.
5. In a large mixing bowl, combine the ketchup, lime juice, hot sauce, Worcestershire sauce, and olive oil (if using).
6. Stir in the chopped cilantro, cucumber, and red onion.
7. Season with salt and pepper to taste.
8. Gently fold in the chopped shrimp and avocado.
9. Taste and adjust seasoning with more lime juice, hot sauce, or salt, as desired.
10. Spoon the shrimp cocktail mixture into individual serving glasses or bowls.
11. If desired, garnish with chopped cilantro, a lime wedge, and a few slices of jalapeño for extra heat.
12. Serve chilled, accompanied by tortilla chips or saltines on the side.
Additional Tips:
1. If you have time, refrigerate the shrimp after cooking for an hour or so to allow the flavors to meld and serve it chilled.
2. Adjust the amount of hot sauce or jalapeños depending on how spicy you like your cocktail.
3. This dish is best served with fresh ingredients, particularly ripe avocados and lime juice.
