Zesty Blueberry Corn Chicken

Ingredients
Chicken
2 chicken breasts, sliced or pounded evenly
1 tbsp olive oil
½ tsp garlic powder
½ tsp dried thyme or oregano
Salt & black pepper, to taste
Blueberry Corn Mix
1 cup fresh blueberries
¾ cup sweet corn (boiled or frozen & thawed)
Zest of 1 lemon
2 tbsp fresh lemon juice
1 tsp honey
Finish
1 tbsp olive oil
1–2 tbsp fresh parsley or basil, chopped
Instructions
1️⃣ Cook the Chicken
Season chicken with garlic powder, herbs, salt, and pepper.
Heat olive oil in a pan over medium heat.
Cook chicken 4–5 minutes per side until golden and cooked through. Remove and set aside.
2️⃣ Make the Zesty Sauce
In the same pan, add butter (or olive oil).
Add corn and cook 2–3 minutes until warm and lightly golden.
Add blueberries, lemon zest, lemon juice, and honey.
Cook 2 minutes until blueberries soften slightly (don’t overcook).
3️⃣ Combine
Return chicken to the pan, spoon sauce over it, and simmer 2–3 minutes so flavors combine.
4️⃣ Serve
Garnish with fresh herbs and extra lemon zest if desired.

Use fresh blueberries for best texture.
Don’t stir too much—keep blueberries mostly whole.
