2 medium zucchini, grated

2 large eggs

2 green onions, finely chopped (or 2 tbsp chopped onion)

2 tbsp fresh parsley or dill, chopped

¼ tsp black pepper

Instructions

1️⃣ Drain the Zucchini

Place grated zucchini in a bowl, sprinkle with ½ tsp salt, toss, and rest 5 minutes.

Squeeze out as much liquid as possible using hands or a clean towel.
