Description:
Tender zucchini rounds are hollowed and filled with a cheesy, herby mixture, then baked until golden. These mini stuffed bites are healthy, flavorful, and great for parties or lunchboxes.
Ingredients:
2 medium zucchinis, sliced into 1-inch thick rounds
1/2 cup breadcrumbs (use panko for crunch)
1/2 cup grated mozzarella or cheddar cheese
2 tbsp grated Parmesan cheese
2 tbsp fresh parsley or basil, chopped
1 garlic clove, minced
1/4 tsp chili flakes (optional)
1 egg (to bind)
Salt & black pepper to taste
Olive oil spray or drizzle
Instructions:
Preheat oven to 190°C (375°F). Line a baking sheet with parchment.
Prepare zucchini:
Slice zucchinis into thick rounds. Use a small spoon or melon baller to carefully scoop out the centers, leaving a base at the bottom to hold filling (like tiny cups).
Make stuffing:
In a bowl, mix breadcrumbs, cheeses, herbs, garlic, chili flakes, egg, salt, and pepper.
Stuff each zucchini round generously with the filling. Drizzle or spray with olive oil.
Bake for 20–25 minutes until golden brown and zucchini is tender.
Garnish with extra herbs or a drizzle of yogurt/garlic sauce.
