Ingredients

1 cup grated zucchini (about 1 small zucchini)

½ cup rolled oats

½ cup whole wheat flour (or oat flour)

½ cup Greek yogurt

1 large egg

2 tbsp olive oil or melted coconut oil

2 tbsp honey or maple syrup

1 tsp vanilla extract

1 tsp baking powder

½ tsp baking soda

½ tsp cinnamon

Pinch salt

Optional: 2 tbsp chopped walnuts or pistachios

Instructions

Preheat Oven

Preheat oven to 180°C (350°F)

Line a muffin tin with paper liners or lightly grease

Mix Wet Ingredients

In a bowl, whisk together Greek yogurt, egg, olive oil, honey/maple syrup, and vanilla

Combine Dry Ingredients

In another bowl, mix oats, flour, baking powder, baking soda, cinnamon, and salt

Fold Zucchini & Combine

Add grated zucchini and nuts (if using) to dry ingredients

Pour wet mixture into dry ingredients

Stir gently until just combined (don’t overmix)

Bake

Spoon batter into muffin cups
