Seafood Mac and Cheese
Crab, prawns and macaroni pasta are used in this recipe for Creamy Baked Seafood Mac and Cheese. This is the ideal, low-key cheesy casserole to complement any dish. For an extra taste boost, add Cajun and Old Bay seasoning!
Components:
- two cups of macaroni without water
- Claw Crab Meat, 6 oz.
- 8 ounces of peeled and deveined prawns
- Eight ounces of sour cream
- Four tablespoons of butter
- Two tablespoons of flour
- One spring onion
- One can of evaporated milk
- Sharp White Cheddar Cheese, 8 oz. block
- 4 oz. block Cheese Mozzarella
- Ponko Bread Crumbs, ¼ cup
- To taste, add salt and black pepper.
Directions:
- Turn the oven back up to 350°F.
- Peel and devein the prawns if needed.
- As directed on the package, cook the macaroni and make sure it’s completely drained.
- Toss the cooked macaroni and sour cream together in a big bowl until the noodles are well covered.
- Add the crab meat and stir.
- Finely chop the spring onion and reserve.
- Grate the mozzarella and white cheddar cheeses, then reserve them separately.
- Melt the butter in a medium saucepan and sauté the prawns until they are just cooked. After removing and allowing them to cool slightly, cut the prawns and add them to the macaroni mixture.
- Sprinkle the onions with flour, toss to coat, and heat for one minute or so, until the onions start to turn golden.
- Add the evaporated milk gradually while continuing to whisk the mixture until it thickens.
- Gradually include the grated cheddar, stirring continuously until it melts completely.
- After adding the cheese sauce to the macaroni and seafood mixture, thoroughly mix everything.
- To taste, add salt and pepper for seasoning.
- Spoon the mixture into a baking dish that has been greased.
- Add a layer of grated mozzarella cheese on top and then top with bread crumbs.
- Sprinkle a little paprika on top for some extra colour.
- Bake for 20 to 25 minutes, or until the top begins to softly brown, in a preheated oven.
