Lemon Chicken Gnocchi
Ingredients:
- 2 large chicken breasts
- 1/2 teaspoon garlic powder
- 1 teaspoon lemon pepper seasoning (see note)
- 1 tablespoon olive oil
- 1 tablespoon butter
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1 tablespoon lemon juice
- 1 cup heavy/whipping cream
- 1 pound uncooked potato gnocchi
- 1/2 cup freshly grated Parmesan cheese
- 2 cups (packed) fresh baby spinach
- Salt & pepper to taste
Instructions:
- Prepare the Chicken:
Season the chicken breasts with garlic powder, lemon pepper seasoning, and a bit of salt and pepper on both sides. - Cook the Chicken:
In a large skillet, heat the olive oil over medium heat.
Add the chicken breasts and cook for 5-6 minutes per side, or until fully cooked and golden brown. Remove the chicken from the skillet and set aside. - Make the Sauce:
In the same skillet, add the butter and let it melt.
Add the minced garlic and cook for about 30 seconds until fragrant.
Pour in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the skillet.
Stir in the heavy cream and let the sauce simmer for 2-3 minutes.
Cook the Gnocchi:
Add the uncooked gnocchi to the skillet with the sauce. Let it cook for about 4-5 minutes, or until the gnocchi is tender and cooked through.
Combine and Finish:
Add the freshly grated Parmesan cheese and stir until melted into the sauce.
Stir in the fresh baby spinach and let it wilt.
Slice the cooked chicken and add it back into the skillet, stirring to combine everything.
Season and Serve:
Season with additional salt and pepper if needed.
Serve hot and enjoy your creamy lemon chicken gnocchi!
Note: If you don’t have lemon pepper seasoning, you can make your own by combining equal parts of lemon zest and cracked black pepper.
