Ingredients

For the Stir Fry:

  • 1 tablespoon Olive oil
  • 1/2 cup carrots, peeled and sliced
  • 1 cup mushrooms, sliced
  • 1 cup broccoli florets
  • 3/4 cup bell peppers, sliced (red and yellow)
  • 1 cup snow peas, trimmed
  • 1/2 cup water chestnuts, drained and sliced
  • 3/4 cup baby corn, drained and sliced
  • 2 teaspoons garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper, to taste

For the Sauce:

  • 1/4 cup of vegetable broth, chicken broth, or water
  • 1/4 cup soy sauce
  • 3 tablespoons honey
  • 2 teaspoons cornstarch

METHOD:

Get the sauce ready:
Combine the vegetable broth, soy sauce, honey, and cornstarch in a small bowl and whisk until the cornstarch is completely dissolved. Put aside.

Cook the Vegetables:

  • In a large pan or wok, heat the vegetable oil over medium-high heat.
  • Add the ginger and garlic, minced, and sauté until fragrant, approximately 30 seconds.
  • Cook the carrots in slices for two to three minutes, stirring often.
    Add the bell peppers, broccoli florets, and mushrooms. Stir-fry for a further three to four minutes.
  • Incorporate the baby corn, water chestnuts, and snow peas. Simmer the veggies for a further two to three minutes, or until they are soft but still crunchy.
