Ingredients:
For the Chicken:
4 boneless, skinless chicken breasts
2 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
Salt and pepper to taste
For the Sauce:
2 tbsp Olive oil
3 garlic cloves, minced
1/2 cup sun-dried tomatoes, chopped
1 cup chicken broth
1 cup Low fat cream
1/2 cup grated Parmesan cheese
1 tsp Italian seasoning
1/2 tsp crushed red pepper flakes (optional)
For the Ravioli:
12 oz (340g) cheese or spinach ravioli (fresh or frozen)
1 tbsp olive oil (optional, for tossing)
Instructions:
Prepare the Chicken:
Season the chicken breasts with garlic powder, onion powder, paprika, salt, and pepper.
Sear the Chicken:
Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4–5 minutes per side until golden brown. Remove from skillet and set aside.
Make the Sauce:
In the same skillet, Add olive oil then add minced garlic and cook for 1 minute until fragrant. Stir in sun-dried tomatoes and cook for another 1–2 minutes.
Add Liquids:
Pour in chicken broth and stir, scraping up browned bits. Add low fat cream, Parmesan cheese, Italian seasoning, and crushed red pepper flakes (if using). Simmer for 5 minutes until thickened.
Combine Chicken and Sauce:
Return the chicken to the skillet, spoon sauce over the top, and simmer for 5–7 minutes until the chicken is cooked through (165°F/74°C internal temperature).
Cook the Ravioli:
While the chicken simmers, cook ravioli according to package instructions. Drain and toss with olive oil or butter, if desired.
Serve:
Plate the ravioli and top with chicken and creamy sauce. Garnish with fresh parsley or basil and extra Parmesan cheese if desired.
