Ingredients

Main Ingredients:

1 medium head of cauliflower, cut into small florets

2 tbsp olive oil (or butter for extra richness)

8 oz (225g) mushrooms, sliced (button, cremini, or portobello)

3 cloves garlic, minced

½ tsp red pepper flakes (optional, for a bit of heat)

1 tsp dried thyme (or 1 tbsp fresh thyme leaves)

½ tsp salt (adjust to taste)

½ tsp black pepper

¼ cup vegetable broth (or water)

¼ cup grated Parmesan cheese (optional, for extra flavor)

2 tbsp chopped fresh parsley (for garnish)

1 tbsp lemon juice (optional, for a fresh touch)

Instructions

1. Prepare the Cauliflower:

Cut the cauliflower into small bite-sized florets. Set aside.

2. Saute the Mushrooms:

Heat 1 tbsp olive oil (or butter) in a large skillet over medium heat.

Add the sliced mushrooms and cook for 4-5 minutes, stirring occasionally, until they release their moisture and start to brown.

3. Add Garlic & Spices:

Stir in the minced garlic, red pepper flakes, thyme, salt, and black pepper.

Cook for 1 minute until fragrant.

4. Cook the Cauliflower:

Push the mushrooms to the side of the pan and add the remaining 1 tbsp olive oil.

Add the cauliflower florets and saute for about 2 minutes.

Pour in the vegetable broth, cover with a lid, and let it steam for 5 minutes until the cauliflower is tender but still slightly firm.

5. Combine & Finish:

Remove the lid and stir everything together.

If using, sprinkle with Parmesan cheese and stir until melted.

Add fresh parsley and a squeeze of lemon juice for brightness.

6. Serve Immediately:

Enjoy as a light main dish or serve as a side with grilled chicken, steak, or fish.

Add Protein: Stir in cooked chicken, shrimp, or tofu for a complete meal.
