Ingredients:

For the Creamy Spread:

4 oz (113g) cream cheese, softened (use full-fat for best texture)

2 tbsp mayonnaise (adds extra creaminess; optional)

1 tbsp fresh dill, finely chopped (or 1/2 tsp dried dill)

1 tbsp fresh chives, finely chopped

1 tsp lemon juice (brightens the flavor)

Salt and pepper to taste

For the Sandwiches:

1/2 large English cucumber or 1 small cucumber, very thinly sliced

6 slices soft white or whole wheat sandwich bread (crustless)

Optional garnish: extra herbs, edible flowers, or radish slices

Instructions:

1. Make the Creamy Spread:

In a small bowl, combine cream cheese, mayonnaise, dill, chives, lemon juice, salt, and pepper. Mix until smooth and creamy. Taste and adjust seasoning.

2. Prepare the Cucumbers:

Thinly slice the cucumber using a sharp knife or mandoline. Pat dry with paper towels to prevent sogginess.

3. Assemble the Sandwiches:

Spread a thin, even layer of the cream cheese mixture on one side of each bread slice. Layer cucumber slices on half the bread slices, slightly overlapping. Top with the remaining bread, cream cheese side down.

4. Trim and Slice:

Use a serrated knife to gently trim the crusts off (optional for classic tea sandwiches). Slice into quarters—either squares, triangles, or fingers.

5. Chill and Serve:

Chill for 15–30 minutes before serving for best texture, or serve immediately. Garnish with herbs if desired.

Bread: Use fresh, soft sandwich bread. Day-old bread can crack when cut.
