Easy Broccoli Cheese Casserole

This quick broccoli cheese casserole is the ultimate comforting side dish. With just a few wholesome ingredients, it comes together in under an hour and bakes to golden, bubbly perfection. Great for holidays, weeknight meals, or even brunch.

Ingredients 

4 cups broccoli florets (fresh or frozen)

2 tbsp olive oil

1/2 onion, finely chopped

2 garlic cloves, minced

1/2 tsp dried thyme or Italian herbs (optional)

2 eggs

1/2 cup milk (dairy or unsweetened almond/oat milk)

1 1/2 cups shredded cheese (cheddar, mozzarella, or dairy-free option)

1/4 cup gluten-free breadcrumbs or crushed almond crackers (optional topping)

Salt and black pepper to taste

Instructions:

1. Prep the Broccoli:

 Preheat oven to 190°C / 375°F. 

Steam or microwave broccoli for 3–5 minutes until just tender. Drain well.

2. Saute Aromatics:

 Heat olive oil in a pan. 

Sauté onion and garlic for 3–4 minutes until translucent. Add herbs if using.

3. Make the Base:

In a large bowl, whisk together eggs, milk, half of the shredded cheese, salt, and pepper.

Stir in the sautéed onion mixture and steamed broccoli.

4. Assemble:

 Pour into a greased 8×8-inch baking dish. 

Top with remaining cheese and breadcrumbs if using.

5. Bake:

 Bake for 30–35 minutes, until the top is golden and bubservin

 Let rest for 5–10 minutes before serving.

Notes & Tips:

Make it anti-inflammatory: Use dairy-free cheese and olive oil; add turmeric or chopped spinach for extra benefits.

Add protein: Mix in shredded rotisserie chicken or canned tuna for a full meal.
