Chicken Avocado Ranch Burritos

Ingredients:
2 cups cooked chicken, shredded (grilled, rotisserie, or leftover)
1 large ripe avocado, diced
1/2 cup ranch dressing
1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
1/2 cup diced tomatoes (optional)
1/4 cup chopped cilantro (optional)
1/4 cup chopped green onions or red onion
4 large flour tortillas
1 cup shredded lettuce (optional)
Salt & pepper to taste
Olive oil or butter for toasting (optional)
Instructions:
Prepare the filling:
In a large bowl, combine the shredded chicken, avocado, ranch dressing, cheese, onions, and optional tomatoes and cilantro.
Add a little salt and pepper, then gently mix everything until combined (don’t mash the avocado too much).
Assemble the burritos:
Warm your tortillas slightly (microwave 10–15 seconds or heat in a pan).
Spoon the filling onto the center of each tortilla.
Add shredded lettuce if using.
Fold in the sides and roll up the burrito tightly.
(Optional) Toast the burritos:
Heat a skillet over medium heat with a little olive oil or butter.
Place burritos seam-side down and cook for 2–3 minutes per side until golden and crispy.
Serve:
Slice in half and serve with extra ranch, salsa, or sour cream on the side.
Customizations:
Spicy: Add diced jalapeños or a splash of hot sauce to the mix.
Low carb: Use low-carb tortillas or serve as a bowl without the wrap.
Veggies: Toss in some grilled peppers or corn for extra flavor.
