Caper Avocado Salad
Ingredients:
2 ripe avocados, diced
1 cup cherry tomatoes, halved
½ red onion, thinly sliced
2 tbsp capers, drained
A handful of fresh parsley or basil, chopped (optional)
2 tbsp olive oil (extra virgin)
1 tbsp lemon juice or red wine vinegar
Salt and pepper to taste
Optional: crumbled feta or shaved parmesan
Instructions:
Prepare the produce:
Dice the avocados.
Halve the cherry tomatoes.
Thinly slice the red onion.
Chop the herbs if using.
Combine ingredients:
In a large bowl, gently mix avocados, tomatoes, red onion, capers, and herbs.
Dress the salad:
Drizzle with olive oil and lemon juice (or vinegar).
Season with salt and freshly ground black pepper.
Toss and serve:
Gently toss to combine without mashing the avocado.
Serve immediately for best texture.
Tips:
Add arugula or baby spinach for a green base.
Swap capers for olives if preferred.
