Roasted Pears with Brie & Almonds.
Ingredients (serves ~2–4)

Pears (ripe but firm) 2
Brie cheese ~100–150 g (a small wheel or wedge)
Sliced or slivered almonds 2 Tbsp (or more if you like crunch)
Honey or maple syrup 1–2 Tbsp
Butter or a neutral oil (olive, etc.) 1 Tbsp
Lemon juice a squeeze (optional)
Salt & pepper to taste
Fresh thyme or rosemary a few sprigs (optional)
Instructions
Preheat Oven
Set your oven to ~200 °C (about 400 °F).
Prepare Pears
Wsh pears, cut in half lengthwise.
Remove the core (you can use a spoon or melon baller).
If desired, peel or leave skin on depending on texture preference.
Roast Pears
Place pear halves cut‑side down in a baking dish.
Dot with a little butter or oil, drizzle some honey (or syrup) over them.
Roast for ~25‑30 minutes until soft but still holding shape.
Add Brie & Almonds
Remove pears from oven, flip them so cut‑side up.
Put pieces/slices of Brie into the hollow/core of each pear half.
Sprinkle the almonds over top.
Final Bake
Return to oven and bake a further ~5 minutes (or until the Brie is melting nicely but not completely runny).
Finish & Serve
Once out of oven, you can drizzle a little extra honey over them.
Season with a tiny pinch of salt and a crack of black pepper.
Garnish with fresh thyme or rosemary if using.
Serve warm. Great with crackers, baguette, or alone.
Tips & Variations
Sweet vs Savory: If you prefer it more savory, you can skip the honey or reduce it, and add a splash of balsamic or a sprinkle of balsamic glaze.
Nuts: Almonds are great, but you could use pistachios, walnuts, or pecans. Toasting them first adds more flavour.
Cheese: Brie works well, but you can experiment with Camembert, goat cheese, or even a blue cheese if you like stronger flavours.
Spice: A pinch of cinnamon or nutmeg can add warmth. Or fresh thyme/herb as garnish
