Ingredients

1 tsp salt

1 cup Greek yogurt

½ cucumber, grated and squeezed to remove water

2 garlic cloves, finely minced

1 tbsp fresh dill, chopped (or 1 tsp dried)

Juice of ½ lemon

1 tbsp olive oil

Salt and pepper, to taste

For the Bowls

2 cups cooked basmati rice, brown rice, or quinoa

1 cup cherry tomatoes, halved

1 small cucumber, diced

½ red onion, thinly sliced

½ cup Kalamata olives

½ cup crumbled feta cheese

Fresh parsley or dill, for garnish

Instructions

1. Marinate the Chicken

In a bowl, whisk olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.

Add chicken pieces, coat well, and marinate for at least 30 minutes (up to 2 hours in fridge).

2. Make the Tzatziki

In a bowl, combine Greek yogurt, cucumber, garlic, dill, lemon juice, olive oil, salt, and pepper.

Mix until creamy and chill until ready to use.

3. Cook the Chicken

Thread chicken onto skewers (if using wooden skewers, soak them in water for 20 minutes).
