Instructions
1. Roast the potatoes
Preheat oven to 220°C (425°F).
Toss potatoes with olive oil, salt, pepper, garlic powder, and oregano.
Spread on a baking sheet (cut side down for extra crispiness).
Roast for 35–40 minutes, flipping halfway, until golden and crispy.
2. Make the herb oil
In a blender or food processor, combine basil, parsley, garlic, lemon zest, and olive oil.
Blend until smooth and vibrant green.
Season with salt and pepper.
3. Assemble the dish
Arrange roasted potatoes on a serving platter.
Tear burrata into chunks and place over the hot potatoes.
Drizzle generously with herb oil.
Finish with a sprinkle of flaky sea salt and fresh basil leaves.
