1 tbsp olive oil

1 tsp lemon juice

1 garlic clove, minced

1 tbsp chopped fresh dill or parsley

For Garnish:

Extra crumbled feta

Fresh herbs (dill, mint, or parsley)

A drizzle of honey or olive oil

Crushed walnuts or toasted pine nuts

Instructions

Preheat Oven:
Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper.

Prepare Sweet Potatoes:
Wash and scrub the sweet potatoes. Pat dry, then rub each with a bit of olive oil, salt, and pepper.
Pierce them a few times with a fork.

Bake:
