Mediterranean Roasted Cauliflower with Herbs & Mild Harissa Tahini
Golden, crispy roasted cauliflower tossed with Mediterranean herbs and served with a creamy, mildly tangy harissa-tahini sauce. The flavors are warm, nutty, fresh, and deeply satisfying without being spicy. A perfect winter side dish or light meal.

Ingredients
For the Roasted Cauliflower
1 medium cauliflower, cut into florets
2 tbsp olive oil
½ tsp dried oregano
½ tsp dried thyme
½ tsp garlic powder
Salt to taste
Optional: pinch of smoked paprika (adds warm flavor, not spicy)
For the Mild Harrisa Tahini Sauce
3 tbsp tahini
1–2 tsp mild harissa paste
(or use ½ tsp if you want almost zero spice)
1 tbsp lemon juice
1 garlic clove, grated (optional)
2–3 tbsp water (to thin)
Salt to taste
For Garnish
Fresh parsley or cilantro
Lemon zest
Sesame seeds (optional)
Instructions
1. Roast the Cauliflower
1. Preheat oven to 220°C (425°F).
2. Toss cauliflower florets with:
Olive oil
Oregano
Thyme
Garlic powder
Salt
3. Spread on a baking tray.
4. Roast 20–25 minutes, flipping halfway, until golden and slightly crispy.
2. Make the Harissa-Tahini Sauce
In a bowl, whisk together:
Tahini
Mild harissa
Lemon juice
Salt
Water (add slowly until creamy and pourable)
Taste → adjust lemon or water as needed.
Note: The sauce should be creamy, smooth, and lightly pink from the harissa.
3. Combine & Serve
Place roasted cauliflower on a plate.
Drizzle with the harissa-tahini sauce.
Sprinkle parsley, lemon zest, and sesame seeds.
Serve warm!
