Instructions
1. Roast the Carrots
1. Preheat oven to 200°C (400°F).
2. Toss carrot sticks with olive oil, smoked paprika, salt, and pepper (and honey if using).
3. Spread on a baking tray.
4. Roast for 20–25 minutes, flipping halfway, until soft and caramelized.

1. Boil potato cubes in salted water until tender (~12–15 minutes).
