Mediterranean Chickpea & Feta Wrap with Veggies & Yogurt Sauce
Ingredients
For the Chickpea Filling
1 can chickpeas, drained and rinsed
1 tbsp olive oil
1 tsp smoked paprika
1 tsp dried oregano
½ tsp garlic powder
½ tsp cumin
Salt & black pepper to taste
1 tbsp lemon juice
For the Veggies
½ cup cucumber, diced
½ cup cherry tomatoes, halved
¼ cup red onion, thinly sliced
¼ cup fresh parsley, chopped
For the Whipped Yogurt Sauce
½ cup Greek yogurt
1 clove garlic, grated
1 tbsp lemon juice
1 bsp olive oil
1 tbsp fresh dill, chopped
Salt & black pepper to taste
For the Wrap
2 large tortillas or flatbreads
½ cup crumbled feta
Optional: baby spinach, pickled onions, olives
Directions
Step 1 — Season the Chickpeas
In a bowl, toss chickpeas with olive oil, smoked paprika, oregano, garlic powder, cumin, salt, pepper, and lemon juice.
Step 2 — Warm the Chickpeas
Lightly sauté the chickpeas in a pan over medium heat for 3–4 minutes until warm and fragrant.
Step 3 — Prep the Veggies
Dice the cucumber, slice the onions, halve the tomatoes, and chop fresh parsle
Step 4 — Make the Yogurt Sauce
Whisk Greek yogurt with lemon juice, olive oil, garlic, dill, salt, and pepper until creamy.
Step 5 — Assemble the Wrap
Spread a generous layer of yogurt sauce onto your tortilla.
Add warm chickpeas, fresh veggies, crumbled feta, and extras like spinach or pickled onions.
Step 6 — Wrap & Serv
Fold and roll the wrap tightly. Slice in half and serve immediately.
