Greek Halloumi Mezze Platter with Pomegranate Drizzle
Ingredients
For the Halloumi
1 block halloumi cheese, sliced
1 tbsp olive oil
½ tsp dried oregano
¼ sp black pepper
For the Pomegranate Drizzle
¼ cup pomegranate molasses
1 tbsp honey
1 tbsp fresh lemon juice
1 tbsp water (to thin, if needed)
For the Mezze Add-Ons
1 cup cherry tomatoes, halved
1 cup cucumber slices
½ cup Kalamata olives
½ cup roasted red peppers
1 cup hummus (any flavor)
1 cup tzatziki
Fresh mint leaves
Warm pita or flatbread
Optional Garnishes
Pomegranate seeds
Crushed pistachios
Lemon wedges
Directions
Prepare the Halloumi
Pat halloumi dry and slice into even pieces.
Heat olive oil in a nonstick skillet over medium-high.
Add halloumi slices and cook 2–3 minutes per side until golden and crisp.
Sprinkle with dried oregano and black pepper. Set aside.
Make the Pomegranate Drizzle
In a small bowl, whisk together pomegranate molasses, honey, lemon juice, and a splash of water.
Adjust consistency until pourable.
Assemble the Mezze Platter
Add hummus and tzatziki to small bowls and place on a large platter.
Arrange tomatoes, cucumber, olives, roasted red peppers, and warm pita around the platter.
Add the crispy halloumi slices in the center.
Drizzle the halloumi with the pomegranate mixture.
Garnish with mint, pomegranate seeds, and crushed pistachios.
Serve
Serve immediately while halloumi is warm and crisp.
