A delicious, restaurant-style dinner made at home. Juicy seared steak, bright and herby chimichurri sauce, and golden roasted sweet potatoes create the perfect balanced plate.

Ingredients

For the Steak

2 steaks (sirloin, ribeye, or tenderloin)

1 tablespoon olive oil

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon lemon juice

For the Chimichurri Sauce

1 cup fresh parsley, finely chopped

2 tablespoons fresh coriander (cilantro), chopped

3–4 cloves garlic, finely minced

½ cup olive oil

2 tablespoons red wine vinegar (or lemon juice)

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon red chili flakes

1–2 tablespoons water if you want a thinner sauce

For the Roasted Sweet Potatoes

2 medium sweet potatoes, cut into cubes

1½ tablespoons olive oil

1 teaspoon salt

½ teaspoon pepper

1 teaspoon garlic powder

½ teaspoon thyme or oregano

Instructions 

1. Roast the Sweet Potatoes

Preheat oven to 220°C (425°F).

Toss sweet potato cubes with olive oil, salt, pepper, garlic powder, and thyme/oregano.

Spread on a baking tray.

Roast for 25–30 minutes, flipping halfway until golden and soft.

2. Make the Chimichurri

In a bowl, add parsley, coriander, minced garlic, salt, pepper, and chili flakes (optional).

Add olive oil and vinegar (or lemon juice).

Mix well. Add a splash of water to thin if needed.

Taste and adjust salt or sourness.

3. Cook the Steak

Pat steaks dry with a tissue (important for good browning).

Rub both sides with olive oil, salt, pepper, garlic powder, and lemon juice.

Heat a pan or grill on high heat until very hot.

Cook:

Medium-rare: 3–4 min per side

Medium: 4–5 min per side

Well done: 6–7 min per side

Let steak rest for 5 minutes before cutting.

4. Serve

Place roasted sweet potatoes on the plate.

Add the steak (slice if you prefer).

Spoon generous chimichurri sauce on top.

Add a simple green salad or sauteed vegetables on the side if you like.

Don’t move the steak too much — let it sear for best crust.

You can add rosemary or butter at the end for extra flavor.
