For the Creamy Herb Egg Salad
3 hard-boiled eggs, chopped
1 ½ tbsp mayo or Greek yogurt
1 tsp mustard
1 tbsp chopped chives
1 tbsp chopped dill or parsley
1 tsp capers (optional but chef’s kiss)
Salt & pepper to taste
For the Bowl
1 generous handful romaine or butter lettuce
½ cup cherry tomatoes, halved
½ cucumber, chopped
½ carrot, shredded
4–5 Kalamata olives, sliced
½ avocado, topped with hemp seeds
Lemon wedge or splash of vinaigrette
1. Make the egg salad
Mix chopped eggs, mayo/yogurt, mustard, herbs, capers, salt + pepper.
Stir until creamy but chunky.
Adjust seasoning to taste.
2. Prep your bowl ingredients
Chop lettuce
Slice tomatoes
Dice cucumbers
Shred carrots
Slice olives
Halve and season avocado
3. Assemble your bowl
Place lettuce as the base.
Add cherry tomatoes, carrots, olives, cucumbers, and avocado around the edges.
