Prep: 10 minutes

Cook: 20–25 minutes

Total: 30–35 minutes

Ingredients

Filling

300g sausage mince OR any chicken/beef sausage removed from casing

1 small onion, finely chopped

1 garlic clove, minced (or ½ tsp garlic powder)

1 tsp dried parsley

½ tsp black pepper

¼ tsp salt

½ tsp paprika

1 tbsp breadcrumbs

For Assembling

1 sheet puff pastry (thawed but still cold)

1 egg (for egg wash)

Sesame seeds or nigella seeds

Instructions

1. Make the Filling

In a bowl, combine:

sausage meat

chopped onion

garlic

parsley

salt

pepper

breadcrumbs

Mix well using hands or a spoon until everything is evenly combined.

2. Prepare the Rolls

Preheat your oven to 200°C (400°F).

Cut the puff pastry sheet into two long rectangles.

Take half of the sausage mixture and place it in a long line down the center of each rectangle.

Roll the pastry over the sausage filling to form a long log.

Press edges to seal (use a little water if needed).

3. Slice & Bake

Slice each long log into 6–8 small rolls.

Place rolls seam-side down on a lined baking tray.

Brush tops with beaten egg.

Sprinkle sesame or nigella seeds (optional).

Bake for 20–25 minutes or until:

golden brown

puffed

crispy

Notes

For Christmas flavor, add ½ tsp dried sage or a pinch of thyme.

Use chicken sausage for a lighter version.

Don’t overfill — filling expands as it cooks.

Make sure pastry stays cold for best puff.

Tips

Chill the rolls for 10 minutes before baking for extra flakiness.

Add 1 tbsp cranberry sauce inside for a festive twist!

Serve warm with mustard or ketchup.

Frequently Asked Question

Q: Can I make these ahead?

Yes! Assemble, freeze raw, and bake directly from freezer (add 5 minutes).

Q: Can I use beef instead of sausage?

Yes, but add extra seasoning since beef mince is less salty/flavorful.

Q: What dip goes best with it?

Honey mustard, ranch, garlic mayo, or cranberry dip.
