Garlicky parmesan zucchini and cherry tomatoes bake

Garlicky Parmesan Zucchini & Cherry Tomatoes Bake

This easy vegetable bake is perfect as a light main, a healthy side dish, or even a pasta or chicken topping. Garlic and Parmesan bring deep savoury flavor, while cherry tomatoes add natural sweetness.

 Time

Prep: 10 minutes

Bake: 30–35 minutes

Total: ~45 minutes

 Ingredients

3 medium zucchini, sliced into rounds or half-moons

1½ cups cherry tomatoes, halved

4 cloves garlic, finely chopped

3 tbsp extra-virgin olive oil

Salt & black pepper, to taste

½ tsp dried oregano

½ tsp dried basil or thyme

Cheese Topping

½ cup freshly grated Parmesan cheese

¼ cup mozzarella (optional, for extra melt)

Optional extras (non-spicy)

Breadcrumbs for crunch

Fresh parsley or basil for garnish

 Instructions

1. Preheat oven to 190°C (375°F). Lightly grease a baking dish.

2. Season vegetables: In a large bowl, toss zucchini and cherry tomatoes with olive oil, garlic, oregano, basil, salt, and pepper.

3. Arrange: Spread evenly in the baking dish.

4. Bake (first stage): Bake uncovered for 20 minutes until zucchini softens and tomatoes blister.

5. Add cheese: Sprinkle Parmesan (and mozzarella if using) evenly on top.

6. Final bake: Return to oven for 10–15 minutes until cheese is golden and bubbly.

7. Serve: Garnish with fresh herbs and serve warm.

 Tips & Notes

Don’t overcrowd the pan—this helps zucchini roast instead of steam.

For extra crisp topping, broil for the last 2 minutes.

Add cooked chicken, chickpeas, or white beans to turn it into a full meal.

Naturally Mediterranean and non-spicy, matching your taste.
