600 g (1.3 lb) chicken tenders
½ cup all-purpose flour
2 eggs, beaten
¾ cup panko breadcrumbs
¼ cup grated Parmesan
1 tsp garlic powder
1 tsp paprika (sweet)
¾ tsp salt
½ tsp black pepper
Olive oil spray
Salad Base
5–6 cups mixed greens (romaine, arugula, or spring mix)
1 cup cherry tomatoes, halved
1 cucumber, sliced
1 avocado, sliced
¼ small red onion, thinly sliced
Optional: olives, roasted corn, or seeds
Honey Mustard Dressing
3 tbsp Dijon mustard
2 tbsp honey
2 tbsp olive oil
1 tbsp apple cider vinegar or lemon juice
Salt & black pepper, to taste
1–2 tbsp water
Instructions
1. Bread the chicken
Pat chicken dry.
Set up breading station:
Flour
Eggs
Panko mixed with Parmesan, garlic powder, paprika, salt, and pepper
Dredge chicken in flour → egg → breadcrumb mixture, pressing gently.
2. Air fry
Preheat air fryer to 200°C (400°F).
Lightly spray basket and chicken with oil.
Air fry chicken 10–12 minutes, flipping halfway, until golden and cooked through (internal temp 74°C / 165°F).
3. Make the honey mustard
Whisk all dressing ingredients until smooth and creamy. Adjust sweetness or tang to taste.
4. Assemble the salad
Add greens to a large bowl.
Top with tomatoes, cucumber, avocado, onion, and warm sliced chicken.
Drizzle with honey mustard dressing just before serving.
