Air-Fryer Mediterranean Vegetables Recipe 

Delicious perfectly cooked air fryer Mediterranean vegetables. Featuring red onion, courgette, butternut squash and red peppers.

INGREDIENTS For

⭐500 g Bag Mediterranean Veggies

⭐1 Tbsp Extra Virgin Olive Oil

⭐1 Tbsp Parsley

⭐1 Tbsp Oregano

⭐Salt & Pepper

INSTRUCTIONS For

⭐Load Mediterranean veggie bag into a bowl. Add seasonings and extra virgin olive oil.

⭐Mix with your hands until the seasoning and oil is well coated on the veggies. Load the veggies into the air fryer basket and air fry for 12 minutes at 180c/360f.

⭐Do a fork test on the zucchini – it’s the slowest cooking item and if its fork tender and crispy then you are done. Otherwise cook for a further 3 minutes.

Veggie pack. The Mediterranean veggies that we used included red onion, courgette (zucchini), butternut squash and red peppers.
