Air fryer rice paper noodle rolls

We’ve discovered the ideal method to elevate everyone’s favourite “lazy” dinners from drab to delicious. Here, we’ve merged two of our fave things: rice paper rolls and quick noodles! These rolls are incredibly crisp on the outside and wonderfully crunchy on the inside thanks to our addition of using an air fryer. For families wishing to add a little extra nutrition to a quick weekday dinner, this is a great option. Additionally, it’s perfect for college students who want to add some extra nutrition to their cheap dinners.

Ingredients:

  1. Two packets of 85g Indomie Instant Noodles Deep-fried Mi Goreng Noodles
  2. Frozen mixed vegetables, 150g (1 cup) (see notice)
  3. 180g (1 cup) cooked chicken, chopped.
  4. One tablespoon of oyster sauce
  5. 15 circular rice paper sheets (20 cm in diameter)
  6. 2 thinly sliced green shallots
  7. One teaspoon of sesame seeds
  8. 60 millilitres, or ¼ cup sweet chilli sauce
  9. 1/4 tsp fresh lime juice

Directions:

  1. Save the sachets of sauce and spice from the noodles. As directed on the package, heat 2 x 85g packets of Indomie Instant Noodles Mi Goreng Fried Noodles in a saucepan of boiling water. In the last 30 seconds of cooking, add frozen mixed veggies (150g, or 1 cup). Empty.
  2. Move the combination of noodles into a big bowl. Add one tablespoon of oyster sauce, half of the two thinly sliced green shallots, and the sauce sachets and spice that you set aside. Mix until well blended. Toss to mix, then add 180g (1 cup) chopped cooked chicken.
  3. Use baking paper to line a baking tray. Tip in a big dish of warm water. One rice paper sheet should be dipped in water for 30 seconds or until it becomes soft. (Take care not to over-soften it. It should be manageable firmness mixed with softness.) Make the switch to a board.
  4. Near the bottom border of the rice paper sheet, place a ¼ cupful of the noodle mixture. Enclose by rolling up and folding in the sides. Transfer to the ready tray. Continue with the remaining noodles and rice paper sheets. Apply oil spray to rolls. Add one teaspoon of sesame seeds on top.
  5. Cook the rolls in batches in an air fryer at 200C for 15 minutes, or until they become crisp.
  6. In the meantime, place the remaining shallots, 1 tbsp fresh lime juice, and 60ml (¼ cup) sweet chilli sauce in a small serving bowl.
  7. Present rolls with sauce for dipping.
