AIR FRYER ROLLS

Dinner rolls that are cooked in the air are light, fluffy, buttery, and incredibly tasty. You will become addicted to making these air fryer buns, I promise!

INGREDIENTS FOR AIR FRYER ROLLS

For the starter:

  1. 120 ml (1/2 cup) of milk or water
  2. 2 tablespoons of bread flour

For the rolls:

  1. 350 g (2 ⅓ cups) bread flour, or more if necessary
  2. 1 tsp sugar
  3. 2 tsp optional skim milk powder
  4. Two tablespoons of fast rise yeast
  5. one egg that has been lightly beaten
  6. 120 millilitres (½ cup) of semi-skimmed milk
  7. 55 grammes (¼ cup) of butter
  8. one teaspoon of salt
  9. One teaspoon cooking spray for the air fryer basket

Egg Wash:

  1. Beat one egg gently with one tablespoon of water

ACTIVATE THE STARTER:

  1. In a saucepan, mix the flour and water. Cook over low heat, stirring, until a paste develops and traces of your whisk appear on the roux’s surface.

GET THE DOUGH READY:

  1. Mix the starter thoroughly after adding the milk. Allow it to warm up just a bit—too much heat can destroy the yeast.
  2. To a mixing bowl (or stand mixer), add the bread flour, sugar, milk powder, and rapid rise yeast. Add the beaten egg and milk/starter and stir to mix.
  3. Start with the dough hook attachment and mix on medium-low speed. When a dough begins to form, add the butter and salt.
  4. Mix the dough for a further five to seven minutes, or until it stops being sticky and forms a ball around the dough hook. The dough should not tear when you gently stretch it between your fingers.

PRIMARY RISE

  1. Spoon the dough into a basin that has been lightly oiled, place a lid on it, and let it rise for 60 to 90 minutes, or more, depending on how warm your kitchen is.

Second RISE:

  1. Fill the air fryer basket with a greased liner and spray cooking spray on the sides of the liner. Arrange the rolls in the basket, leaving a small gap between them.
  2. After placing a fresh towel over them, wait 45 to 60 minutes, or until they are puffed out, touching, and have doubled in size.

IN-AIR BAKER:

  1. After applying an egg wash to the bread rolls, top with any desired toppings.
  2. Air fry at 325°F (160°C) for 25 to 28 minutes. The rolls should be fully baked at this stage, but their undersides will still be paler than if they were prepared in an oven. If you would like, you may turn them over and continue to air fry them for a few more minutes to brown them.

Notes:
TIPS FOR USING AN AIR FRYER TO BAKE BREAD:

  • An air fryer functions similarly to a small convection oven, but it heats from the top. This may result in a cake or bread rolls that brown too quickly on top while still being doughy underneath.
  • While I haven’t tried it, I have read some recipes for air fryer rolls that state they bake in ten minutes. For me, the finest results came from baking the rolls for about 25 to 30 minutes without first heating the air fryer.

  • Remember that every air fryer is a little bit different. Until you determine what is most effective for your model, you must “trial and error.”
  • To assess the progress of your rolls, you simply open the air fryer basket. Turn the heat down a few degrees if they are browning too much.
  • If the bottoms are looking doughy and pale, flip the buns over towards the end of the cooking time and bake them bottom side up so that they brown evenly.
