Autumn Salad
Autumn Salad is a seasonal mix of fresh greens, roasted squash, apples, cranberries, nuts, and a tangy vinaigrette, perfect for fall!

Ingredients:
For the Salad:
* 4 cups mixed salad greens (e.g., spinach, arugula, and lettuce)
* 2 medium apples, thinly sliced (choose your favorite variety)
* 1/2 cup chopped walnuts or pecans
* 1 stick celery
* 2 pitted mandarin segmented
* 1/4 cup cranberries or blueberries
* 1/4 cup crumbled feta cheese (optional)
* 1/4 cup shell, pasta (optional)
For the Dressing:
* 2 tablespoons apple cider vinegar
* 1 tablespoon olive oil
* 1 teaspoon Dijon mustard
* 1 teaspoon honey or maple syrup
* Salt and pepper to taste

Instructions:
1. In a large bowl, combine the mixed salad greens, thinly sliced apples, chopped walnuts, Celery mandarin cranberries, and crumbled feta cheese (if using).
2. In a small bowl, whisk together apple cider vinegar, olive oil, Dijon mustard, honey or maple syrup, and season with salt and pepper to taste.
3. Drizzle the dressing over the salad and toss gently to coat all the ingredients evenly.
4. Divide the salad into individual serving plates or bowls.
5. If desired, sprinkle a few additional chopped walnuts and a touch of feta cheese on top for extra flavor and presentation.
6. Serve the summer salad immediately and savor the delicious combination of crisp apples, crunchy walnuts, and flavorful dressing.
