Baked Spicy Ranch Chicken Fingers with Honey Mustard

  1. 2 lbs chicken tenders, boneless
  2. 1 tbsp dried chives
  3. Fresh chives or parsley (for garnish)
  4. 2 tsp dried dill
  5. 1 tsp garlic powder
  6. 1 tsp onion powder
  7. Juice of 1/2 lemon
  8. 1 tbsp dried parsley
  9. 2 cups corn flakes
  10. 1/4 cup Dijon mustard
  11. 1/4 cup honey
  12. 2 tbsp whole wheat flour
  13. 1 1/4 tsp cayenne pepper (adjust to taste)
  14. Kosher salt and black pepper, to taste
  15. 1/4 cup extra virgin olive oil
  16. 1 cup buttermilk

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the Chicken: In a large bowl, combine the chicken tenders with the dried chives, dried dill, garlic powder, onion powder, lemon juice, dried parsley, kosher salt, and black pepper. Mix well to coat the chicken evenly.
  3. Prepare the Coating: Place the corn flakes in a resealable plastic bag and crush them into coarse crumbs using a rolling pin or your hands. Transfer the crushed corn flakes to a shallow dish.
  4. Coat the Chicken: In another shallow dish, mix together the Dijon mustard, honey, whole wheat flour, cayenne pepper, kosher salt, black pepper, and olive oil. Dip each chicken tender into the buttermilk, then into the mustard-honey mixture, and finally coat it with the crushed corn flakes, pressing gently to adhere.
  5. Bake the Chicken: Place the coated chicken tenders on the prepared baking sheet. Bake in the preheated oven for 20-25 minutes, or until the chicken is golden brown and cooked through, flipping halfway through the cooking time.
  6. Make the Honey Mustard Dip: While the chicken is baking, prepare the honey mustard dip by combining the Dijon mustard and honey in a small bowl. Adjust the sweetness and tanginess according to your taste preference.
  7. Serve: Once the chicken fingers are done, remove them from the oven and let them cool slightly. Garnish with fresh chives or parsley, if desired. Serve warm with the honey mustard dip on the side.
  8. Enjoy: Enjoy your delicious Baked Spicy Ranch Chicken Fingers with Honey Mustard dip as a tasty appetizer or main dish!
  9. Feel free to adjust the level of spiciness by increasing or decreasing the amount of cayenne pepper. Enjoy your meal!
