Basic Lemon Pizza Recipe
Ingredients:
Pizza dough (store-bought or homemade)
Olive oil
Fresh mozzarella or ricotta
Parmesan or pecorino
1 lemon (thinly sliced, seeds removed)
Fresh thyme or basil
Garlic (optional)
Chili flakes (optional
Salt & black pepper
Optional Add-ons:
Arugula
Prosciutto
Goat cheese
Honey drizzle
Instructions:
Preheat oven to 475°F (245°C), or as high as your oven allows.
Roll out dough on a floured surface and place it on a pizza stone or baking sheet.
Brush dough with olive oil.
Add cheese: Lay mozzarella or dollops of ricotta, and sprinkle with grated Parmesan.
Top with lemon slices — very thin so they roast well (Meyer lemons are sweeter and ideal).
Season with a little salt, pepper, thyme, and optional garlic or chili flakes.
Bake for 8–12 minutes, or until the crust is golden and the lemons are slightly charred.
Finish with fresh herbs or a drizzle of honey for sweetness
