Ingredients

BBQ Chicken

2 cups cooked shredded chicken (rotisserie or leftover)

¾ cup BBQ sauce

½ tsp smoked paprika

Salt & black pepper, to taste

Tostadas

8 corn tostada shells

1½ cups shredded mozzarella, cheddar, or Monterey Jack cheese

Fresh Toppings

1 cup shredded lettuce

½ cup cherry tomatoes, diced

¼ cup red onion, thinly sliced

½ cup sweet corn (canned or grilled)

¼ cup fresh cilantro, chopped

Creamy Drizzle 

½ cup sour cream or Greek yogurt

1 tbsp lime juice

Salt, to taste

Instructions

1. Prepare the BBQ chicken

In a bowl, mix shredded chicken with BBQ sauce, smoked paprika (if using), salt, and pepper until well coated.

2. Bake the tostadas

Preheat oven to 200°C (400°F).
Place tostada shells on a baking sheet.
Top each with BBQ chicken and sprinkle evenly with cheese.

Bake 8–10 minutes until cheese is melted and bubbly.

3. Make the creamy drizzle

Whisk sour cream (or yogurt) with lime juice and a pinch of salt until smooth.

4. Assemble

Remove tostadas from oven.
