Ingredients

For the Base:

2 cups cooked rice (white, brown, or cilantro-lime rice)

1 can (15 oz) black beans (or pinto beans), rinsed and drained

½ tsp smoked paprika

½ tsp garlic powder

Salt & pepper, to taste

For the Veggies & Toppings:

1 cup corn (grilled, roasted, or frozen/thawed)

1 cup cherry tomatoes, halved

1 cup shredded lettuce (or romaine)

1 avocado, sliced or mashed

½ cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)

½ cup salsa (tomato salsa or roasted red pepper salsa)

¼ cup sour cream or Greek yogurt

Fresh cilantro & lime wedges, for garnish

‍ Instructions

1. Prepare the Rice:

Cook rice according to package directions. If making cilantro-lime rice: stir in 2 tbsp chopped cilantro, juice of ½ lime, and a pinch of salt.

2. Season the Beans:

In a skillet, heat olive oil. Add beans with cumin, paprika, garlic powder, salt, and pepper. Cook 3–4 minutes until warm and slightly thickened.

3. Assemble the Bowl:

Divide rice into bowls.

Top with seasoned beans, corn, tomatoes, lettuce, avocado, and cheese.

Spoon salsa over the top. Add a dollop of sour cream or Greek yogurt.

4. Finish & Serve:

Garnish with fresh cilantro and a squeeze of lime.
