1 large egg

½ cup milk

2 cloves garlic, minced

½ small onion, finely diced

1 tbsp Worcestershire sauce

1 tsp salt

½ tsp black pepper

½ tsp dried oregano

½ tsp smoked paprika

¼ tsp red pepper flakes (optional, for heat)

For the Cheese Filling

6 oz (170g) mozzarella cheese, cut into small cubes

½ cup ketchup

1 tbsp brown sugar

Instructions

Step 1: Preheat & Prepare

Preheat oven to 375°F (190°C).

Line a baking sheet with parchment paper or lightly grease a mini muffin tin for easier cleanup.

Step 2: Make the Meat Mixture

In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, Parmesan, egg, milk, garlic, onion, Worcestershire sauce, salt, pepper, oregano, paprika, and red pepper flakes.

Mix gently with your hands or a spatula until just combined. Do not overmix, as it can make the meatloaf bites dense.

Step 3: Form & Stuff the Meatballs

Take about 1 ½ tablespoons of the meat mixture and flatten it into a disc.

Place a small cube of mozzarella cheese in the center.

Wrap the meat around the cheese and roll it into a ball, ensuring the cheese is completely enclosed.

Place on the prepared baking sheet or muffin tin.
