Ingredients:
- 2 (10-inch) tortillas (corn tortillas for gluten-free)
- 1 cup Monterey Jack cheese, shredded
- 1/2 cup cooked chicken, sliced or shredded
- 1/2 avocado, sliced
- 1/4 cup salsa verde
- 1 tablespoon cilantro, chopped
Method:
Get the tortillas ready:
A big skillet should be heated to medium heat.
Put the quesadillas together:
- In the skillet, place one tortilla. Evenly distribute half of the Monterey Jack cheese shreds over the tortilla.
- Cover the cheese with the cooked chicken.
Evenly distribute the avocado pieces on top of the chicken. - Over the avocado, drizzle with the salsa verde.
Add the chopped cilantro on top.
Place on top and cook:
- Pressing gently, place the second tortilla on top of the filling.
- Cook the tortilla for two to three minutes on each side, or until the cheese has melted and the tortilla is golden brown. To prevent burning the tortilla, you may need to change the temperature.
