Chili Garlic Chicken with Peppers & Steamed Rice

What You’ll Need:

For the Stir-Fry:

2 chicken breasts (300g), chopped

1 tbsp oil

1 red bell pepper, sliced

1 green bell pepper, sliced

1 small onion, sliced

2 cloves garlic, minced

1 tsp fresh ginger (optional)

1–2 tsp chili flakes

 

1 tsp cornstarch mixed with 2 tbsp water

 

Sauce Mix:

 

2 tbsp soy sauce

 

1 tbsp rice vinegar or lime

 

1 tbsp chili garlic sauce

 

1 tsp brown sugar

 

1 tsp sesame oil (optional)

 

To Serve:

 

1 cup cooked rice

 

Sliced chili for topping (optional)

 

How to Make It:

 

Mix sauces: Stir together soy sauce, vinegar, garlic chili paste, sugar, and sesame oil. Set aside.

 

Sear the chicken: In a pan with oil, cook chicken until browned and fully cooked, 5–6 minutes. Remove.

 

Sauté veggies: In the same pan, briefly cook garlic, ginger, and chili flakes. Add onion and peppers. Stir-fry for 3–4 minutes.

 

Finish: Return chicken, pour in sauce, and add slurry. Simmer 1–2 minutes until thick.

 

Serve with rice and extra chili for heat!
