Chow Mein Recipe
Ingredients
Chow Mein Noodles:
- 8 oz. (230g) steamed chow mein or fresh chow mein noodles
Chow Mein Sauce:
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1/2 teaspoon sugar
- 1/2 teaspoon dark soy sauce
- 2 tablespoons water
Other Ingredients:
- 2 tablespoons cooking oil
- 3 cloves garlic, finely minced
- 2 oz. (60g) chicken, cut into thin strips
- 6 medium-sized shrimp, shelled and deveined
- 1/2 cup shredded cabbage
- 1/4 cup shredded carrot
- 2 stalks scallions, cut into 2-inch strips (5 cm)

METHOD:
Get the sauce ready:
Mix the oyster sauce, sugar, dark soy sauce, water, and soy sauce in a small bowl. Until the sugar dissolves, thoroughly stir. Put aside.
Prepare the Noodles:
Use your hands to loosen the fresh chow mein noodles if using them. If you’re using steamed chow mein, you may give them a quick reheat in boiling water before draining and putting them aside.
Stir-Fry the Substances:
- In a large wok or pan, heat the cooking oil over medium-high heat.
- Add the minced garlic and cook for approximately 30 seconds, or until fragrant.
Add the chicken strips and sauté for two to three minutes, or until they begin to become golden.
After adding the prawns, heat for a further two to three minutes, or until they are cooked through and become pink.
Include Veggies:
To the wok, add the carrot and shreds of cabbage. Stir-fry the veggies for a further two minutes, or until they are crisp but still tender.
Mix the noodles with the sauce.
- To the pan, add the cooked noodles. Cover the noodles with the prepared sauce.
- Mix everything together until all the ingredients are well combined and the noodles are covered evenly with the sauce.
- After adding the scallions, stir-fry for an additional minute.
Serve:
Take the chow mein from the stove and serve it hot. Savour your delicious handmade chow mein!
