Prep Time: 15 minutes
Chill Time: 20 minutes
Total Time: 35 minutes
Servings: 4-6
Ingredients:
For the Coleslaw
400g (14 oz) Brussels sprouts, finely shredded
1 medium red cabbage, thinly sliced
2 medium carrots, julienned or grated
1 red apple, julienned (optional, for sweetness)
4 green onions, finely sliced
½ cup dried cranberries (or pomegranate seeds)
½ cup slivered almonds (toasted)
For the Dressing
½ cup Greek yogurt (or mayonnaise for creamier dressing)
2 tablespoons Dijon mustard
2 tablespoons apple cider vinegar
1 tablespoon honey (adjust for sweetness)
1 tablespoon olive oil
Salt and pepper to taste
Instructions:
Prepare the Vegetables
Shred Brussels sprouts, cabbage, and carrots using a sharp knife, mandoline, or food processor. Place them in a large mixing bowl.
Add the green onions, cranberries, apple (if using), and toasted almonds. Toss to combine.
Make the Dressing
In a small bowl, whisk together Greek yogurt, Dijon mustard, apple cider vinegar, honey, olive oil, salt, and pepper until smooth.
Assemble the Coleslaw
Pour the dressing over the shredded vegetables and mix thoroughly until well coated.
Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
Serve
Transfer the coleslaw to a serving bowl and garnish with additional cranberries or almonds if desired.
Notes:
Make Ahead: This coleslaw can be made a day in advance. Add the almonds just before serving to maintain their crunch.
Substitutions: Swap cranberries for raisins or dried cherries and almonds for sunflower seeds if needed.
Vegan Option: Use vegan mayonnaise or coconut yogurt and maple syrup instead of honey.
Tips:
Consistent Shredding: Use a food processor with a slicing attachment for evenly shredded vegetables.
Toasting Almonds: Toast the slivered almonds in a dry pan over medium heat until golden and fragrant, about 2-3 minutes.
Balancing Sweetness: Adjust the honey or apple inclusion based on your taste preference and the tartness of your cranberries.
