Ingredients
For the Pasta & Broccoli:
12 oz pasta (penne, fettuccine)
1 teaspoon salt (for boiling water)
2 cups broccoli florets
For the Chicken:
2 tablespoons olive oil (or butter)
2 chicken breasts, diced into bite-sized pieces
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika (optional, for extra flavor)
For the Creamy Sauce:
3 cloves garlic, minced
1 cup heavy cream (or half-and-half for a lighter option)
1/2 cup chicken broth (or reserved pasta water)
1 cup Parmesan cheese, grated
1 teaspoon Italian seasoning
1/4 teaspoon red pepper flakes (optional, for a bit of spice)
For Garnish:
1/4 cup Parmesan cheese, extra for topping
2 tablespoons fresh parsley, chopped
Instructions
Step 1: Cook the Pasta & Broccoli
1. Bring a large pot of salted water to a boil.
2. Add the pasta and cook according to package instructions until al dente.
3. In the last 2 minutes of cooking, add the broccoli florets to the pot.
4. Drain and set aside, reserving 1/2 cup of pasta water if needed for the sauce.
Step 2: Cook the Chicken
1. Heat olive oil in a large skillet over medium-high heat.
2. Add the diced chicken, season with salt, pepper, and paprika, and cook for 5-6 minutes, until golden brown and cooked through.
3. Remove the chicken from the skillet and set aside.
Step 3: Make the Creamy Sauce
1. In the same skillet, reduce heat to medium, and add the minced garlic. Saute for 30 seconds until fragrant.
2. Pour in the chicken broth and stir, scraping any browned bits from the pan.
3. Add the heavy cream, Parmesan cheese, Italian seasoning, and red pepper flakes. Stir well and let simmer for 2-3 minutes, until the sauce thickens.
Step 4: Combine Everything
1. Return the chicken to the skillet, then add the pasta and broccoli.
2. Toss everything together, adding reserved pasta water if needed to loosen the sauce.
3. Cook for 2 more minutes, letting the flavors combine.
Step 5: Serve & Garnish
1. Remove from heat and sprinkle with extra Parmesan cheese and fresh parsley.
2. Serve warm and enjoy!
